La lavorazione della pasta: l’impasto, composto da semola di grano duro italiano di primissima qualità e uova fresche italiane allevate a terra, viene miscelato in un’apposita impastatrice e temperatura ambiente e, una volta che ha raggiunto le caratteristiche necessarie, viene passato in un’altra macchina chiamata gramolatrice che pressa l’impasto fino al raggiungimento della giusta consistenza per poter passare alla sfogliatrice. Con le sfogliatrici, essenzialmente macchine provviste di rulli in acciaio che sostituiscono il mattarello in legno, la pasta viene laminata a temperature ambiente fino a raggiungere lo spessore ideale da poterla passare alle taglierine. Ogni passaggio della sfogliatrice viene seguito manualmente con 12-14 ripetizioni e lo spessore di ogni sfoglia cambia a seconda del tipo di pasta da dover produrre. Anche lo spessore di ogni sfoglia viene misurato manualmente come si faceva un tempo, per garantire ad ogni prodotto la propria caratteristica. Infatti lo spessore è differente nei tipi di pasta per la formazione delle matassine, per l’essiccazione, per la cottura e la trattenuta del condimento. Una volta formata la sfoglia, viene tagliata la sfoglia di Lasagna per poi, attraverso un passaggio sempre manuale, dargli la forma desiderata. L’essiccazione, avviene anch’essa a temperatura ambiente per tempi molto lunghi circa 48 ore. Una volta che la Lasagna esce dagli essiccatoi deve riposare per un certo periodo di tempo che varia da prodotto a prodotto e che può essere più o meno lungo anche in funzione delle condizioni climatiche. La produzione della nostra pasta, dall’impasto al confezionamento, quindi viene seguita meticolosamente dalle nostre donne che da anni, passo dopo passo e manualmente, si prendono cura di ogni dettaglio per dare ai nostri prodotti quella caratteristica in più: una lavorazione artigianale fatta quasi interamente a mano. La pasta inoltre, essendo un laminato lavorato a temperatura ambiente, durante il suo ciclo di lavorazione non subisce variazioni termiche: questo ci permette di non alterare le qualità organolettiche delle materie prime. Il nostro processo di lavorazione garantisce la conservazione delle proteine delle uova e dei carboidrati della semola per mantenere l’elasticità, la porosità e il sapore ai massimi livelli.

L’azienda: il Pastificio Caponi è un pastificio artigianale toscano che produce pasta all’uovo essiccata dal 1953. Nato da una piccola bottega di pasta fresca, intorno agli anni ‘60 ha avuto la sua prima trasformazione: la piccola bottega si trasferisce in locali più grandi e diventa un laboratorio artigiano di pasta all’uovo fresca ed essiccata con vendita al dettaglio e all’ingrosso. Allora si vendevano i nostri prodotti nella provincia di Pisa e in poche altre province della Toscana. Successivamente negli anni ‘80 il Pastificio Caponi si è trasformato in un laboratorio di sola pasta essiccata; ancora oggi si produce esclusivamente pasta all’uovo laminata, e non trafilata, seguendo un ciclo di lavorazione quasi interamente manuale ed a temperatura ambiente, con un periodo di essiccazione di circa 80 ore ed effettuando una meticolosa ricerca delle materie prime. Durante tutti questi anni i proprietari infatti hanno conservato la tradizionale lavorazione manuale, con uova fresche e semola di grano duro, portando avanti un ciclo di lavorazione il più simile possibile a quello della pasta fatta in casa. Proprio per questo motivo non siamo in grado di produrre quantitativi industriali ed i nostri prodotti sono destinati ad una clientela di nicchia, amante del buon cibo e della tradizione culinaria italiana.

The “Pastificio Caponi” is a Tuscan handmade pasta factory that produces dried egg pasta since 1953. It was born from a small workshop of fresh pasta, around the 1960s it had its first transformation: the small workshop moved in bigger space and became an handmade laboratory of fresh and dried egg pasta sold by the retail and wholesale. In those years, we sold our products in the province of Pisa and in other few provinces of Tuscany. Subsequently in the year 1980s, the “Pastificio Caponi” transformed itself in a dried pasta laboratory only; till today we produced exclusively laminated egg pasta, and no drawn, following a working cycle almost entirely manual and room temperature, using a drying period about 80 hours and making a properly research of the raw materials. During these years, the owners have kept the traditional manual working process, by fresh eggs and durum wheat semolina, conducting a working process cycle as similar as possible to the one of homemade pasta. Exactly for this reason we are not able to produce industrial quantities and our products are earmarked to a niche clientele, lovers of good food and the culinary Italian tradition. Since some times, we have taken a new challenge because of the growth of the request by our customers: Gluten free pasta. The Gluten free pasta, made in the respect of the provided rules for gluten decontamination, has as ingredients corn and rice that give a coloration and a quality very different from the typical gluten free pasta in the market. By the years our products have reached several markets, not only in Italy but also in the European States like French, England, Belgium, Germany and few extra European States mainly USA and Canada. Anyway, in any case, our aim is conducting the tradition that characterize our production cycle, but with a touch of modernity thought innovative design and captivating packages. All that in the years has made that Caponi’s pasta stand out from many other types of pasta are the attention and care in every detail, from the creation of the dough to the packaging, which since 1953 are the basis of our company. The meticulous research of raw materials higher quality has always been the basis of our policy, along with the constancy to pursue a course of sixty years of working as close as possible to that ancient tradition of making pasta that was an excellent dowry of old Italian housewives. Infact, since 1953 the method of processing hasn’t changed and the production is made by 70% by hand. The dough, made only of Italian durum wheat semolina and eggs (23%), is mixed in a special machine called pasta maker. After the formation of the dough, the lamination process takes up to 10 – 12 passes through the rolling machine, that the dough sheet reaches the required thickness. This allows the product to retain unchanged the volatile substances typical of the used ingredients, preserving the quality of gluten, to obtain a pasta more permeable to sauces and characterized by an incomparable chewiness. Subsequently, each rolls of dough are passed to the cutters to obtain the desired formats which are then made in skeins, again manually, so to facilitate the passage of air and allow a perfect drying on special looms. Then it is proceeded with the placement of the looms in special wooden boxes for the drying. The drying was set not to give any stress to the dough: this phase requires in fact a very long time and a room temperature. Once the pasta comes out of the driers, this must rest for a certain period of time which varies from product to product and may be more or less long according to weather conditions. Then, the entire process is conducted at room temperature and for this reason the laminated dough has a brighter color, as the pigments of the dough sheets are thermolabile and are inhibited by high temperatures. The packaging, also this carried out rigorously by hand, closes a process based on complete attention of the Caponi products.
